Commis Chef / Kokk

Carried by heritage. Crafted by people.

In 1837, Hôtel du Nord opened its doors as Trondheim's first hotel — a place where meals, conversations and hospitality stood at the centre. When Villa Nord opens at Dronningens gate 26 in 2026, we carry that story forward, with a clear eye on what comes next.

About Villa Nord

Villa Nord will be Trondheim's first boutique hotel, with 51 individually curated rooms, a restaurant, wine bar, café and intimate meeting spaces. The hotel is rooted in the city's history, yet designed for the modern traveller seeking stillness, quality and authentic experiences.

Villa Nord is not a traditional hotel. It is a place shaped by history, people and quiet precision.

Our gastronomy reflects the same: local produce. Seasonal menus. Precision without rigidity. Meals that invite guests to linger a little longer.

Villa Nord is owned by Villa Nord AS, wholly owned by Hoff Hotels AS (Realinvest AS).

We are now looking for a Commis Chef who wants to learn the craft properly — from the ground up, alongside people who care as much about how things are done as what ends up on the plate.

This is a role for someone at the start of their kitchen career, eager to build strong foundations, willing to listen, and ready to give their full attention to the work in front of them.

About the Role

As Commis Chef, you are where a great kitchen begins. You prepare, you learn, you support — and over time, you grow into a cook the brigade can rely on.

You work closely with the Chefs de Partie and Sous Chef, taking direction with an open mind and carrying it out with care. The basics done well — clean stations, sharp knives, honest mise en place — are never small things here. They are the foundation everything else rests on.

You bring energy, humility and a genuine wish to improve. We will meet you with the time, guidance and trust to do exactly that.

Your Responsibilities

  • Carry out preparation and mise en place to a consistent, high standard, with care and attention
  • Support the Chefs de Partie across the sections, learning each in turn
  • Follow recipes, methods and direction closely, and ask when something isn't clear
  • Keep your station clean, organised and ready throughout service
  • Handle seasonal, local produce with respect — minimising waste wherever you can
  • Uphold food safety and hygiene standards at all times
  • Contribute to a calm, supportive kitchen with professionalism and a willingness to learn

We Are Looking for Someone Who

You may be early in your career, but you arrive with the right instincts: a real interest in food, a readiness to work hard, and the humility to learn from those around you.

We believe you:

  • Have some experience in a kitchen, or formal culinary training — or a strong, demonstrable drive to begin
  • Take pride in doing the basics well, every time
  • Respect the craft, the produce and the people you work alongside
  • Stay calm and focused during service, and pitch in willingly outside of it
  • Want to grow within a team that values character as much as skill
  • Have a genuine interest in seasonal cooking, sustainability and local producers

Why Villa Nord

With us, you get to be part of building something from the very beginning. Not a standardised concept — but a place with soul, room to learn, and genuine ambition.

With us, you will find:

  • A real foundation for your career, in a kitchen that takes craft seriously
  • The chance to learn across sections, with seasonal, locally sourced produce
  • Experienced chefs who teach with patience and invest in their people
  • A team culture built on trust, respect and shared standards
  • A working environment where quality always comes before quantity

Villa Nord is a place where every detail matters and every person contributes. If this resonates, we would love to hear from you.

We review applications on a rolling basis. All enquiries are treated in strict confidence.
