ASSISTANT RESTAURANT MANAGER – VILLA NORD
Carried by heritage. Crafted by people.
In 1837, Hôtel du Nord opened its doors as Trondheim's first hotel – a place where meals, conversation and care stood at the centre. When Villa Nord opens at Dronningens gate 26 in 2026, we carry that story forward, with a clear eye on what comes next.
About Villa Nord
Villa Nord will be Trondheim's first boutique hotel, with 51 individually curated rooms, a restaurant, wine bar, café and intimate meeting spaces. The hotel is rooted in the city's history, but shaped for modern travellers seeking calm, quality and genuine experiences.
Villa Nord is not a traditional hotel.
It is a place shaped by history, people and quiet precision.
Villa Nord is owned by Villa Nord AS, wholly owned by Hoff Hotels AS (Realinvest AS).
We are now looking for an Assistant Restaurant Manager who will be a visibly present host and shift leader across breakfast, café and restaurant – and a key support to the Restaurant Manager in daily operations.
This is a role for someone who understands that true luxury is not about volume or pace, but about presence, quality and details that are felt – not announced.
About the role
As Assistant Restaurant Manager, you are closest to the floor. You lead shifts, see both guests and team, and make sure the quality holds – from the first coffee in the morning to the last glass at night.
This is a role for someone who understands that good service is not a script, but a relationship. For someone who leads through presence, clarity and respect – and who wants to grow into greater responsibility over time.
You work closely with the Restaurant Manager, kitchen and bar, and report to the Restaurant Manager.
Your responsibilities
- Daily operations and shift leadership across breakfast, café and restaurant
- Being a visible, steady host for our guests – and a clear leader for the team on the floor
- Ensuring a cohesive, personal and consistent guest experience in line with Villa Nord's values
- Day-to-day training, follow-up and development of the service team
- Staff planning and flow in collaboration with the Restaurant Manager, kitchen and bar
- Contributing to the development of the hotel's wine portfolio and wine list
- Upholding routines, standards and service culture – and suggesting improvements where you see them
- Deputising for the Restaurant Manager when needed
We are looking for someone who
- Leads with calm, clarity and warmth
- Has a strong sense of quality and detail
- Thrives in the interplay between kitchen, bar and service
- Has experience with food and wine in combination – sommelier training is an advantage, but not a requirement
- Understands the balance between efficient operations and human presence
- Communicates clearly, honestly and respectfully
- Is motivated by building something over time – not just delivering in the short term
Why Villa Nord
With us, you get to shape something from the very beginning. Not a standard concept – but a place with soul, a clear identity, and room for craft and ambition.
What we offer
- A central role in the operations of a unique boutique hotel with a clear identity
- The opportunity to help set standards and culture from the start
- A strong concept rooted in history, craftsmanship and human connection
- Close collaboration with engaged owners and an ambitious professional environment
- A working day where quality always comes before quantity
- A real path for professional and personal growth in a house being built right now
Villa Nord is a place where leadership is about seeing people, creating trust, and leaving room for the unexpected. If this resonates, we would love to hear from you.
