We're looking for a Bar & Restaurant Manager with a passion for beverage culture, hospitality, and community to join our team at Hobo Copenhagen. Opening in February 2027, you will play a key role in building our atmosphere from day one. Are you a visible, vibrant leader with strong bar and restaurant expertise who loves making guests feel welcome? Someone who can inspire a team, handle fast-paced service, and bring our spaces to life? Then keep reading.

About Hobo

Yes, Hobo Copenhagen will be a lifestyle hotel. But more importantly, it will be a community. A place where we live, work, create, learn, and have fun together. A space for the curious, the social, and the young at heart. Since day one, with our sister hotels in Stockholm, Helsinki and Oslo, Hobo has been about more than rooms, it's about experiences, culture, and connection. With our vibrant restaurant, bar, event spaces, and local footprints, we will be constantly evolving. Always in beta. Always moving. We live by three core values: professional, passionate, and playful — and we expect the same from you.

About the role

As our Bar & Restaurant Manager, you will lead daily service across our cocktail bar, all-day café, and restaurant & bar as a key member of the F&B management team alongside the F&B Manager and Head Chef. A typical week in this role revolves around peak operational hours, with shifts starting around 15:00 and extending late into the evening or night (up to 03:00 on weekends). The vast majority of your time will be spent directly on the floor, guiding floor staff, jumping behind the bar during busy periods, connecting with guests, and resolving situations with composure. Your administrative hours each week will be focused on building staff schedules aligned with operational needs, handling sick cover, managing beverage inventory, ordering supplies, and hosting staff training on menu- and product knowledge. Through hands-on leadership, your ultimate goal is to build an energized team culture, establish seamless collaboration with the kitchen, maintain tight stock control, and position Hobo’s bars and restaurant as vibrant, go-to destinations in Copenhagen.

What you'll do

  • Maintain a visible presence across our bar and restaurant spaces during prime service hours, evenings, and weekends.

  • Onboard, coach, and guide floor and bar staff in service standards, guest engagement, and product knowledge.

  • Engage directly with guests, respond to feedback, and resolve operational challenges with warmth and composure.

  • Prepare staff schedules aligned with business flow, manage sick cover, and handle beverage ordering, inventory, and waste reduction.

  • Share enthusiasm for cocktails, wine, and local drinks, training the team on recommendations and product highlights across all outlets.

  • Partner closely with the kitchen, hotel teams, and F&B Manager to maintain smooth guest flow and operational excellence.

Desired qualifications

  • Relevant management experience within bar and restaurant operations.

  • Strong bar and/or restaurant background and practical knowledge, with the ability to lead product training and maintain high service standards.

  • Hands-on experience with staff scheduling, stock control, ordering, and floor service management.

  • Fluent in English, both written and spoken.

  • A natural people-person with a proactive, solution-oriented mindset who stays calm under pressure.

  • Comfortable working with point-of-sale (POS) systems and staff scheduling software.

Bonus if you

  • Hold specialist knowledge or a deep personal passion in a beverage category, such as cocktails, wine, or craft beer.

  • Are fluent or proficient in Danish or a Scandinavian language.

  • Have experience opening new bar/restaurant venues or managing high-volume lifestyle environments.

  • Hold formal hospitality management or leadership qualifications.

What we offer

As a full-time employee at Hobo Copenhagen, you are also a member of Strawberry and Nordic Hotels & Resorts, which gives you a lot of benefits.

  • A creative playground where your ideas actually come to life.

  • The chance to shape one of Copenhagen's most dynamic new hotel brands.

  • A role where no two days are the same and you can leave your personal imprint.

  • Four free nights at a hotel of your choice in our hotel chain per year.

  • Staff prices in all chain restaurants and hotels (Strawberry).

Employment type

This position is a full-time position, part of the F&B management team and reporting to the F&B Manager, Gobo Hansen. Flexibility in scheduling is required, including availability for evenings and weekends depending on the activity.

If you meet these requirements and are ready to create, connect, and curate the F&B scene at Hobo Copenhagen from the inside out, we'd love to hear from you.

Send us your CV. To help us get to know you, attach a cover letter, or even better, a short video telling us about yourself and your absolute favorite, hidden spot in Copenhagen.
